Tuna Dip & Crackers!

Servings: 2 to 4 servings
Ingredients:
3 small cans of tuna in water
1/2 large onion cut in small dice
1/2 large fresh tomato cut in small dice
1 handful of chop fresh cilantro
2 pinches of salt
2 pinches of black ground pepper
5 to 6 tablespoons of Mayonaise
Variety of crackers of your likening
Garnish:
Fresh Parsley
2 wedges of tomato
In a small bowl add all ingredients mixed thoroughly then placed into serving dish and place garnish in top of the dip and ready to serve.

Poolock (Codfish) Gazpacho

Ingredients
1 whole avocado cut in small dice
1 package of frozen, salted, boneless and skinless Codfish
1 medium onion sliced in julienne
1 maso fresh cilantro chopped
2 medium size tomatoes cut small dice
2 to 3 tablespoons of Extra Virgin Olive Oil
1 pinch of salt
6 cups of water
Directions
In a small pot add 2 cups of water bring to boil at medium high heat then add the codfish. Cook for 15 minutes then drain the water rinse the codfish and in the same pot repeat the same procedure 2 more times. Once codfish is drained for the third time using a fork shred and place into a bowl. then add the onions, cilantro, tomatoes, oil and salt fold all ingredients together carefully without breaking the pieces of avocado and is ready to serve.
Can Be accompany with white rice and beans, Viandas (starches such as potatoes, plantains, green bananas, ñame, batata (sweet potatoes) etc...) also made into a sandwich or just all by itself.
